Who doesn't love a good recipe that the whole family will enjoy?
We at the Bases Loaded house are no exception, especially me, who happens to LOVE to cook.
Over the years I have compiled what I call my "Tried and True" recipes. These are things that I cook that pretty much everyone will eat. These are recipes I entertain with and that company has been known to request when I ask them, "What would you like me to make when you're here?" These are what the boys and Kent routinely choose when it is their turn to pick a meal. I would like share these with you every so often in this blog. Most will just be a link to the recipe, if there is no link I will type it out.
This week we'll talk chicken. Wings and Fingers to be exact. These have got to be some of my most requested recipes.
My chicken wing recipe was found by Kent at All Recipes, one of my favorite sites to get recipes from. I follow this one to a T, although I don't always remember to coat them in flour 60-90 min. before. Sometimes it's just 5 min. before and they turn out just fine.
I always make ranch dressing and blue cheese dip to go with the wings. Kent is rather picky about his ranch so I have to use the Hidden Valley Buttermilk Dry Mix to make my own. (Is there anything Amazon doesn't have a link for?) The blue cheese dip I got from my sister and is as follows:
- 1 cup mayo
- 1/2 cup sour cream
- 1/4 cup parsley (I only add this if I happen to have it on hand)
- 2 Tbls. red wine vinegar or lemon juice (I use the vinegar)
- 1 tsp. minced garlic
- 6 dashes Worcestershire
- salt & pepper to taste
- 4 oz. crumbled blue cheese
Combine until well mixed and chill until ready to serve.
Matthew likes the wings but he does not like eating meat off a bone, so usually when I make wings, I make these "The Lady and Sons Chicken Fingers". In case you couldn't tell by the name the recipe is from Ms. Paula Deen. I make the honey mustard to go with it, but have never added horseradish or orange juice to it.
This is obviously not a meal we enjoy very often due to the high fat and calorie content. The boys are limited to how often they can choose this. It just so happens though, we will be enjoying this on Saturday night. Kent's family will be in town and this, along with another recipe to be shared later, was one that they specifically requested.
